![]() ![]() Or freeze it for those days you’re rushing through a busy schedule, and need a quick meal. Transform the soup stock into hearty chicken noodle soup like this one. Use it as a base for different dishes like Filipino favorites: Misua, Sotanghon soup, Pancit Molo, Nilaga, Tinola, Arroz Caldo, Pancit Miki, Calandracas, or even instant ramen soups. ![]() It was a scent that reminded me of the warmth and love felt from a good home-cooked soup, shared around the table. Pretty soon, the savory aroma of chicken boiling in onions floated around the kitchen. A few seasonings here and there were tossed into the mix. I quickly sauteed onions, and garlic, added the chicken, and poured the liquid. Then, with the stock, I made the Chicken Soup. I took the chicken carcass I had leftover from a roast. Inspired by a recipe from book designer and chef Ige Ramos, I started the weekend simmering soup stock. ![]() And it all starts with a good soup stock which is easy to make at home. There is nothing like sumptuous soup which has full-bodied flavors. I also use this same soup stock to make the Filipino classic Lomi Noodle Soup. I also used a few cups to make chicken noodle soup, which is always my go-to soupy meal. Once the soup stock was ready, I stored them in individual plastic containers and froze them for future use. Autumn will be here in a few weeks, so I started to cook Soup Stock for Chicken Noodle Soup. ![]()
